On most nights, Diane Willey doesn't know what she'll cook for dinner until 4 or 5 p.m., "but I always come up with something!" she says. The same freewheeling approach extends to her baking and gives rise to all kinds of quick, tasty treats. "If I don't have an ingredient, I just put something else in its place," she explains.
Richard, her husband of 21 years, adds: "She's always refining recipes and is a fabulous cook. She's ruined me!" The two live on a 75-acre farm in rural Bozman, Maryland, where Diane used to train guide dogs for the blind.
Because of her volunteer work, gardening and a passion for crochet and embroidery, Diane looks for simple recipes. Her fudge is so easy, she says, one son used to make it as a gift for grade school teachers.
