"This entree is my takeoff on my sister's pork tenderloin recipe. I simplified it by substituting chicken," Susan explains. "Canned cranberries and juice really brighten up cold-weather meals and make them something special.
"I often fix this saucy chicken when our eight children visit. It's also a quick after-work dinner for my husband, Tom, and me—with plenty of leftovers for lunch. I've served it with rice pilaf, polenta and mashed sweet potatoes.
"When I feel like playing with my sauce, I add caramelized onions and raisins," Susan says, admitting she loves experimenting in the kitchen. The director of a furniture store, she enjoys reading, going to movies and plays, and taking walks with her dogs.
