A busy grade school principal in Prairieville, Louisiana, Judy Armstrong lives on a farm with veterinarian husband Tim. Also the mother of college student Katelyn and teens Thomas, Kristen and Ashley, she cooks sit-down family meals almost every night.
"I value the time we share together after school and work to reflect upon and talk about the day," she says, "and cooking is very relaxing for me after a long day at work." But with all the kids involved in sports, Judy adds, "simple and delicious weeknight meals are important."
The family all gathers in the kitchen to help with nightly cooking, and it brings back fond memories of times Judy spent with her grandparents, parents, aunts, uncles and cousins cooking and laughing.
