As Brenda Carpenter of Warrensburg, Missouri will tell you, inspiration can come when you least expect it. "My husband, Jerry, and I went out to eat, and we enjoyed this wonderful chicken dish," Brenda recalls.
"I loved it so much that I tried to re-create it at home," she relates. "Now, Smothered Chicken Breasts are a family favorite.
"Everyone who has tried this dish thinks it's delicious and asks for the recipe," she says. "And since everything cooks in one skillet, it's a snap to clean up," Brenda adds.
Easy cleanup is a bonus for her husband, son, Taylor, and daughter, Tabitha, who tidy the kitchen every night.
When Brenda's not planning or preparing meals, she enjoys her job at a local kindergarten, teaches Sunday school, gardens and cares for the family's cat, dog, five cows and 60 chickens on their 10-acre homestead.
But cooking remains her favorite hobby. And with one bite of Smothered Chicken Breasts, it's easy to see why Brenda's restaurant-inspired dish led her to prize-winning success.
