Sharing a love of cooking with her husband makes daily meal preparation a pleasure for Arletta Slocum of Venice, Florida. She and Keith have been married for 53 years and enjoy sit-down dinners almost every night of the week.
“We love eating at home and try to have healthy meals that include meat, salad and veggies,” explains the mother of three grown children and grandmother of eight. “But later in the evening, we do like a little dessert.”
One after-dinner treat they particularly enjoy is Butter Pecan Pumpkin Pie. “Many years ago, I cut the recipe out of a newspaper. It called for vanilla ice cream, but since my husband’s very favorite is butter pecan, I use that instead,” Arletta notes.
“I mostly prepare it in the fall for Thanksgiving or Christmas brunch,” she shares. “Just a few ingredients are needed, and since I often buy canned pumpkin at fall grocery store sales, I usually have everything on hand.
Plus, it’s fast to fix and can be assembled ahead of time, which fits her busy lifestyle perfectly. Besides reading, painting, knitting, arranging flowers and cooking, Arletta serves on committees at her church and with a ladies’ Shrine club. She also volunteers at a local art center and is a docent and performer at a historic site. |
