Married 62 years this July, Velma Jo Brown still prepares three sit-down meals a day for husband Robert and herself on their beautiful farm near Port Royal and the Kentucky River. “There might be more people on special occasions,” she notes, ticking off two married daughters, Carol and Susan, five grandchildren and seven great-grandkids.
After so many years, you might say Velma has cooking for a big family “down cold.” Her irresistibly refreshing Coffee Ice Cream Pie is just one example.
Velma loves the ready-made pie shell and ice cream that make this treat so quick to fix…as well as its practicality. “You can substitute your own favorite ice cream or a sugar-free variety if there’s a diabetic in the family,” she says.
In addition to cooking, sewing and writing, Velma also serves as organist, Sunday school teacher and volunteer at her church—and raises her own vegetables. She loves it all.
