Erin Renouf Mylroie of St. George, Utah juggles roles as a wife to husband Shane and mom to daughter Sailor and son West. Plus, she’s a college professor and just-for-fun marathon runner.
“I love cooking with asparagus and other vegetables, but our children tend to avoid anything green on their plates,” Erin explains. “Knowing how much they like noodles, I tossed veggies in with their pasta.” The result was this kid-approved winner.
A quick family meal, Erin’s entree is elegant enough for company. “For guests who are meat eaters, you can add chicken, shrimp or beef to their portions,” she hints. “Or make it heartier for vegetarians with garbanzo beans.
“It’s tasty hot or cold and a snap to prepare for cooks keeping many balls in the air.” |
