Coated with golden crumbs, these tender chicken rolls seem fancy enough for company. I've substituted mozzarella cheese for the provolone and pastrami for the ham with equally delicious results. —Barbara Wobser Sandusky, Ohio

Cindy CarlGet to Know...Cindy Carl!

Cindy Carl is a second-generation cookbook collector. “My mom bought cookbooks from nearby churches, our firehouse and local organizations,” she writes from Barto, Pennsylvania. “As a child, I was always practically under my mom’s apron in the kitchen, baking and cooking together.”  It should come as no surprise then, that Cindy’s mom gave her a cookbook when she was 12. “I have been collecting them ever since,” Cindy writes. “Today, I have well over 200 cookbooks.”

Some people curl up with a good book, but Cindy says she prefers to sit down with a cookbook and page through it, cover to cover. “Cookbooks are a staple for my relaxation times,” she explains. “I prefer cookbooks with photographs. If there’s a great picture of a dish, I'm much more likely to give the recipe a try. I also enjoy recipes with stories behind them. I like learning what makes the dish special to the author.”

Cindy has dozens of titles that she relies on when preparing menus. “The Taste of Home Annual Recipes cookbooks are some of my favorites because I can find a recipe for just about anything,” she says. “If we're in the mood for chicken, I can look up chicken in the index and find several easy ideas. I once wanted to try something new with hotdogs. I grabbed the 1999 edition, and I found a great tasting dish named Corn Dog Casserole.”

The casserole quickly became a family favorite with Cindy’s gang, as did Banana Split Bread from the 2003 edition. “Some of our other favorites are Bruschetta Chicken (Taste of Home Annual Recipes 2002) and Chocolate Chip Pancakes (Taste of Home Annual Recipes 2004),” shares Cindy.

“When I became a mom, I carried on the same tradition my mother taught me,” she notes. “I taught my son to cook and bake at a very young age. Today, he is very self sufficient in the kitchen, but at age 20 he says, ‘It's still better when you make it, mom!’"
