Get to Know...Vicki Karras!

Vicki Karras Vicki Karras became a cookbook author at the age of 13...sort of. “I pasted recipes I liked onto the pages of an old book,” she writes from Fairfield, North Dakota. “It wasn’t long before I started collecting real cookbooks, and I haven’t stopped since.”

As of now, Vicki has more than 1,000 titles in her collection. “Last year my husband hired a carpenter to build a bookcase for my cookbooks,” she explains. “I’m sorry to say that I’ve already run out of space!

“My collection comes in handy because I like trying new recipes,” she adds. “My husband loves the fact that he never eats ‘repeats’ as he calls them.”

Two of Vicki’s favorite recipes come from Taste of Home books. “Baked Salisbury Steak from The Ultimate Ground Beef Cookbook and Creamy Beef Stroganoff from The Ground Beef Cookbook are always popular in our house,” she explains.

Owning a small tavern, Vicki often prepares a surprise for her patrons. “I once combined a few ideas to create a pickled egg recipe,” she says. “The eggs are such a hit that I’ve been offered as much as $250 for the recipe.” Vicki doesn’t plan on sharing her secret any time soon, however. “Who knows?” she concludes. “I may just write a cookbook of my own one day, and that will be a featured recipe!”
