Food Editor Pat Schmeling has the monumental job of evaluating recipes submitted for our contests. Recently, she sorted through more than 1,800 cupcake recipes for the Cupcake Challenge in the April/May magazine!

We also asked readers to share ideas for decorating cupcakes, and one of them was perfect for Pat. “I was thinking about what kind of birthday cake to make for my granddaughter when I came across a photo and description of a cute barn cake with cupcakes that looked like chickens, pigs and the sun,” she told me. “It will be perfect!” (Be sure to check out the Barnyard Bash from reader Colleen Palmer on page 44 of your April/May magazine, which will be arriving soon!)
