Southern Ambrosia Apple Pie

Welcome to this week’s Menu$aver newsletter! Soup is a quick, easy and good-for-you meal option all year long. But it’s especially nice as temperatures drop! So we’re featuring a Hearty Minestrone Soup in this week’s issue. When paired with Pop-Up Rolls and Apple Nut Crunch, you’ll have a complete meal that satisfies but doesn’t cost a fortune to make.

You’ll also find Brown-Bag Burritos, Sweet Minglers and Make-Ahead S'Mores. These three recipes are certain to perk up a brown bag lunch for school or work.

Hearty Minestrone Soup

Packed with sausage and veggies, this soup is not only nutritious, it's also a great way to serve up your garden bounty. —Donna S., Fairport, New York

ingredients
  • 1 pound bulk Italian sausage
  • 2 cups sliced celery
  • 1 cup chopped onion
  • 6 cups chopped zucchini
  • 1 can (28 ounces) tomatoes, undrained, cut up
  • 1-1/2 cups chopped green pepper
  • 1-1/2 teaspoons Italian seasoning
  • 1-1/2 teaspoons salt
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder

directions
In a large saucepan, cook the sausage until no longer pink. Remove with a slotted spoon to paper towel to drain, reserving 1 tablespoon of drippings. Saute celery and onion in drippings for 5 minutes. Add sausage and remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until the vegetables are tender.

Pop-Up Rolls

For lightly sweet, biscuit-like rolls that are anything but dry, you can’t beat simple Pop-Up Rolls. With just four basic ingredients that are mixed in one bowl, these easy-to-make rolls go great alongside just about everything. —Judy B., Liberty, North Carolina

ingredients
  • 1-1/2 cups self-rising flour
  • 3/4 cup milk
  • 3 tablespoons sugar
  • 1-1/2 tablespoons mayonnaise

directions
In a bowl, stir together all ingredients until thoroughly combined. Fill greased muffin cups half full. Bake at 375° for 18-20 minutes or until lightly browned.

Editor’s Note: As a substitute for 1-1/2 cups self-rising flour, place 2-1/4 teaspoons baking powder and 3/4 teaspoon salt in a measuring cup. Add all-purpose flour to measure 1 cup. Combine with an additional 1/2 cup all-purpose flour.

Apple Nut Crunch

This is an old family recipe, and it smells wonderful as it bakes in the oven. And its taste is even more terrific than its aroma. —Hazel F., Palestine, Illinois

ingredients
  • 1 egg
  • 3/4 cup sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon ground cinnamon
  • 1/2 cup chopped peeled apple
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 2-1/4 cups ice cream

directions
In a mixing bowl, beat the egg. Combine sugar, flour, baking powder and cinnamon; add to egg and beat until smooth. Fold in apple, nuts and vanilla. Spoon into a greased 8-in. square baking pan. Bake at 350° for 25-30 minutes or until cake tests done. Cool. Serve with ice cream.

• Try two meatless meals a week (or start with one meatless meal) or use meat as an ingredient instead of a main dish.

• Cut back on the juice and milk.

Use the money saved by eating less meat and drinking less juice and buy something else on sale. Those sale items will help you cut back even further next month.
