Snowman MealYoungsters will dig right into this playful potato-topped Snowman Party Stew, loaded with ground beef and vegetables, from our Test Kitchen. The dashing details are easy to add after baking. A homemade white sauce seasoned with Swiss cheese and garlic salt adds great flavor to this speedy Cauliflower Snowman. Edible Evergreens require only two ingredients and are a snap to assemble. Just gather the edge of a fruit roll as you wrap it around a sugar cone "trunk" to make pretty evergreen "branches." Creating this charming Sweet Snowman is even more fun than building the real thing—and you don't need mittens to do it. All the purchased treats kids love give this frosty fellow his engaging identity. SNOWMAN PARTY STEW
In a skillet, cook beef until no longer pink; drain. Remove 24 peas and one carrot chunk from the stew vegetables; set aside. Add the remaining vegetables to beef. Cook until vegetables are thawed. Add gravy; mix well. Pour into an ungreased 9-in. pie plate. Top with eight mashed potato snowmen, using 1 tablespoon of potatoes for each head and 3 tablespoons for each body. Bake, uncovered, at 350° for 20 minutes. Meanwhile, with a sharp knife, cut the reserved carrot into eight strips. Insert one strip into each snowman for a nose. Place three reserved peas on each snowman for buttons. Add peppercorns for eyes. Drizzle ketchup between head and body to form a scarf. Yield: 6-8 servings. In a large saucepan, cook cauliflower in a small amount of water for 6-7 minutes or until crisp-tender; drain well. In a medium saucepan, saute onion in butter for 2 minutes. Stir in flour until blended; gradually add milk. Bring to a boil; boil for 2 minutes, stirring constantly. Remove from the heat; stir in cheese until melted. Add salt, garlic salt and pepper. Place half of the cauliflower in a greased 2-1/2-qt. baking dish; top with half of the sauce. Repeat. Bake, uncovered, at 350° for 20 minutes or until bubbly. With a scissors, cut roll-ups widthwise into thirds. Gather each piece, beginning with a long side, to form ruffles. Place ice cream cones on a serving plate. Starting at base of cone, attach ruffles by wrapping around cone. Pinch at top to form a point. Yield: 2 trees. Editor's Note: This recipe was tested with Fruit Roll-Ups brand, which has fruit pieces measuring approximately 5 x 5 inches. If roll-ups have precut designs in them, place unrolled fruit between two sheets of greased waxed paper. Microwave on high for 10-15 seconds. Roll fruit flat with a rolling pin. Remove waxed paper. Place 1 teaspoon vanilla frosting on top of each Sno Ball. Stack Sno Balls on a serving plate on top of each other to form the snowman. Cut skewers slightly shorter than the height of the snowman; insert through the center of Sno Balls to secure them. Place chocolate wafer on top to form hat brim. Place a dollop of frosting on top of one sandwich cookie; top with other cookie. Attach to wafer with frosting to create the hat. Carefully tie licorice around snowman for a scarf. Use frosting to attach M&M's for eyes, candy corn for nose, miniature chips for mouth and semisweet chips for buttons. Dust confectioners' sugar around base of snowman if desired. Looking for Lighter Fare?![]() “Zesty Turkey Spaghetti Sauce is good for you because it calls for lean cubed turkey instead of meatballs,” says Sue Yaeger of Boone, Iowa. “For extra flavor, I add turkey pepperoni to the sauce, along with fresh green pepper, onion and mushrooms—the seasonings can be modified to fit anyone’s tastes.” Mock Caesar Salad—a lightened up version of the classic—is a tasty compliment to a soup or main dish. “Best of all, the thick, creamy dressing has all the flavor you’d expect with just a fraction of the fat,” says Sue. “My husband, Mike, made Chocolate Mousse one night using skim milk and a few lighter convenience items,” Sue explains. “The result was this fluffy rich-tasting dessert that the kids and I request time and again.” ZESTY TURKEY SPAGHETTI SAUCE
In a Dutch oven or large kettle, saute the turkey, green pepper, onion and mushrooms in oil until vegetables are tender. Stir in the spaghetti sauce, pepperoni, wine or broth and tomato paste. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Uncover; simmer 15-20 minutes longer or until thickened. Meanwhile, cook vermicelli according to package directions; drain. Serve with sauce. Yield: 5 servings. Nutrition Facts: One serving (1 cup sauce with 1 cup vermicelli) equals 428 calories, 6 g fat (1 g saturated fat), 77 mg cholesterol, 752 mg sodium, 54 g carbohydrate, 5 g fiber, 37 g protein. In a small bowl, whisk together the first seven ingredients. In a salad bowl, combine the romaine, croutons and cheese. Drizzle with dressing; toss to coat. Yield: 5 servings. In a bowl, whisk milk and pudding mix for 2 minutes (mixture will be very thick). In a mixing bowl, beat the sour cream, cream cheese and vanilla. Add pudding; mix well. Fold in whipped topping. Spoon into individual dishes. Sprinkle with cookie crumbs. Refrigerate until serving. Yield: 6 servings.
