After sampling this turkey sausage version, they ask for it frequently. Packed with flavorful meat and a huge assortment of vegetables, Beef Vegetable Stew from Donna Nannini of Caledona, Michigan is sure to satisfy. Stews are a favorite food of Jodi Bierschenk from Newhall, Iowa. She likes that Savory Pork Stew can be put together to simmer while she gets things done around the house. You'll appreciate the convenience of this one-dish meal. TURKEY SAUSAGE STEW 1 package (16 ounces) frozen vegetables for stew 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed tomato soup, undiluted 2 cups water 1 pound reduced-fat smoked turkey sausage, sliced 1/4 inch thick 1/4 cup ketchup 2 garlic cloves, minced 1/2 teaspoon dried basil 1/4 teaspoon pepper In a large saucepan, combine vegetables, soup and water; bring to a boil. Reduce heat. Add remaining ingredients; simmer for 35-45 minutes or until the vegetables are tender. Yield: 8 servings. Nutrition Facts: One serving equals 190 calories, 8 g fat (0 saturated fat), 25 mg cholesterol, 622 mg sodium, 17 g carbohydrate, 0 fiber, 11 g protein. Diabetic Exchanges: 1-1/2 meat, 1 starch. http://www.tasteofhome.com/RD.asp?ID=3522&pmcode=$$refurl-link$$ BEEF VEGETABLE STEW 2-1/2 pounds lean beef stew meat, cut into 1-inch cubes 2 large onions, chopped 2 garlic cloves, minced 1/2 cup water 1 reduced-sodium beef bouillon cube 3 cans (14-1/2 ounces each) reduced-sodium beef broth 4 potatoes, peeled and cubed 3 medium carrots, sliced 2 medium green peppers, cut into 1/2-inch pieces 2 celery ribs, sliced 3 cups cubed rutabaga 1-1/2 cups cubed parsnips 1-1/2 cups cubed turnips 3/4 teaspoon dried marjoram 1/2 teaspoon pepper 1/4 teaspoon dried savory 1/4 teaspoon hot pepper sauce 2 tablespoons cornstarch 3 tablespoons water In a Dutch oven, combine the beef, onions, garlic, 1/2 cup water, bouillon and enough of the broth to cover. Bring to a boil. Cover and simmer until meat is tender, about 2 hours. Add vegetables, seasonings and remaining broth. Simmer 30-45 minutes or until vegetables are tender. Combine cornstarch and water; gradually add to the boiling mixture. Cook and stir for 2 minutes. Yield: 16 servings. Nutrition Facts: 1 cup equals 143 calories, 3 g fat (0 saturated fat), 21 mg cholesterol, 59 mg sodium, 13 g carbohydrate, 0 fiber, 15 g protein. Diabetic Exchanges: 2 vegetable, 1 lean meat, 1/2 starch. http://www.tasteofhome.com/RD.asp?ID=3518&pmcode=$$refurl-link$$ SAVORY PORK STEW 1 pound lean boneless pork, cut into 1-inch cubes 1 cup chopped onion 1 teaspoon dried basil 1/2 teaspoon dried rosemary 1/4 teaspoon pepper 1/2 cup water 1 can (16 ounces) reduced-sodium tomato sauce 2 cups sliced carrots 1 green pepper, chopped 1/2 pound fresh mushrooms, sliced Place pork in a Dutch oven that has been sprayed with nonstick cooking spray. Cook over medium heat until browned. Add onion, seasonings, water and tomato sauce; bring to a boil. Reduce heat; cover and simmer 1 hour or until meat is tender. Stir in remaining ingredients. Cover and simmer until the vegetables are tender, about 30 minutes. Yield: 5 servings. Nutrition Facts: 1 serving equals 201 calories, 7 g fat (0 saturated fat), 48 mg cholesterol, 644 mg sodium, 15 g carbohydrate, 0 fiber, 18 g protein. Add extra flavor to reduced-fat frozen whipped topping with different extracts, such as coconut, cherry, lemon, etc. It's a real treat! --> Replace salt with a spicy seasoning for ribs, chicken and chops. Mix equal amounts of white pepper, cayenne pepper, black pepper, paprika, onion powder and garlic powder. Make a big batch, then store it in a cool, dry place for up to 6 months. --> Enjoy sausage gravy over biscuits for breakfast with less fat by making a plain white sauce. Add salt, pepper, a dash of cayenne pepper and sage.
