I don’t know about you, but I’m ready for a little sunshine in my life. Every year around this point I start itching to tuck away my big parka, surround myself in pretty spring colors and start thinking lovely thoughts about all the fresh, bright food coming my way. That’s what I love about the February/March issues of Taste of Home and Simple & Delicious—they give you a little peek at all the sunny salads, lemony roast chicken, fresh veggies and happy brunch recipes that make spring so wonderful. And I gotta tell you, I’m so ready.
Of course, when winter tries its hardest to stick around a bit longer, I’m thankful for the comforting casseroles, chowders and slow cooker recipes I can lean on in these last chilly days. March is just the perfect month to try out those warm-you-up dishes that give you the first taste of springtime-y freshness. I’m sharing a few of my favorites to get you through this lion-and-lamb stretch with a smile.
