An Old, Wonderful Sugar Favorite—Rolled in Nuts Before Baking

Preheat oven to 375°F. In large bowl beat sugar, butter, egg yolk and vanilla until fluffy. Stir in flour and salt. Roll dough into 1-inch balls. Dip into slightly beaten egg white; roll in nuts. Place on cookie sheet. Bake 5 minutes. Remove from oven. Quickly indent each cookie center with thumb. Return to oven and bake 8 minutes. Fill each thumbprint with half a candied cherry, a bit of jelly or melted chocolate. Cool on rack.
