Ingredients:

Instructions:

Wash mint leaves and place in large saucepan; mash. Add apple juice. Bring to a boil; remove from heat, cover pan and let stand 10 minutes. Strain. Add lemon juice and few drops of green food color; measure 1 3/4 cups of this mixture. In large saucepan, combine liquid and sugar. Bring to a boil, stirring constantly. Stir in pectin, return to full boil for 1 minute, stirring constantly. Remove from heat. Skim foam. Pour into 3 hot sterilized jars. Seal immediately.
