Stuffed Hawaiian Chicken Puffs
1 can (28 ounces) petite diced tomatoes
- 2 cans (20 ounces each) crushed pineapple in own juice, drained
- 1/2 cup cider vinegar
- 1 package (2.8 ounces) Ball® Simple Creations® Fruit Salsa Mix
- 1 box (17.3 ounces) puff pastry sheets
- 1 cup shredded cooked chicken
- 3/4 cup fancy shredded Mexican cheese
- Chili powder
Thaw pastry sheets at room temperature for 20 minutes; do not unfold.
Combine tomatoes, pineapple, vinegar and Fruit Salsa Mix in a saucepan. Bring to a boil. Reduce heat and simmer 5 minutes; reserve 1 cup salsa. Refrigerate or freeze remaining salsa for another purpose. In a medium bowl, combine reserved salsa, chicken and cheese.
Preheat oven to 350 °F. Unfold 1 pastry sheet on lightly floured surface. Roll into 12- x 12-inch square. Cut into nine 4-inch squares. Repeat for second pastry sheet. Place 1 tablespoon of chicken mixture into each pastry square. Fold over one corner to match the opposite corner. Pinch all sides to secure. Sprinkle tops with chili powder. Bake at 350 °F for 15 minutes, or until tops are golden brown. Yield: about 16 puffs.
No-Guilt Angel Parfaits
1 bag (16 ounces) frozen unsweetened whole strawberries
- 1 bag (16 ounces) frozen unsweetened blueberries
- 1 bag (12 ounces) frozen unsweetened raspberries
- 1 pouch (1.59 ounces) Ball® Fruit Jell® Freezer Jam Pectin
- 1-1/2 cups SPLENDA® Brand Sweetener
- 4 scoops no sugar added vanilla ice cream
- 1 cup cubed angel food cake, cubed
- Light whipped topping
- Zest of 1 lemon
Defrost berries, allowing a few ice crystals to remain. Crush berries. Measure 4 cups; set aside. Combine freezer jam pectin and sugar in a large bowl, stirring until evenly blended. Stir in crushed berries. Continue stirring for 3 minutes. Reserve 1 cup jam.
In each parfait glass, layer 1 scoop ice cream, 1 tablespoon jam, 1/4 cup cubed angel food cake and another tablespoon jam. Garnish with whipped topping and lemon zest. Yield: 4 parfaits.
