Happy May! And to all of the hardworking moms reading this, Happy Mother's Day! May always seems like such a busy time. From Mother's Day to Memorial Day, graduations and spring recitals, it's tough to squeeze in meals. This month, I'm looking forward to trying some quick new recipes as well as familiar standbys to get me through the crunch.

In the past, I've often hosted a special brunch for my mom, sister and sister-in-law on Mother's Day. This year, we're all headed in different directions, but I may still whip up a favorite, such as Breakfast Crepes with Berries or Overnight Stuffed French Toast, for my husband and me.

On busy nights, a quick-to-fix oven recipe offers some welcome hands-free time, so I'll definitely put Baked Chicken Chimichangas on my weeknight rotation. They'd be so quick to fix with rotisserie chicken. And, when Memorial Day rolls around, we'll pull out the grill for a favorite from last year, Cherry-Barbecue Pork Ribs.
