When red bell peppers go on sale, you can bet your bottom dollar per pound that my basket will be full of them. With more vitamin C than an orange and an excellent source of carotenoids, these bell-shaped beauties are perfectly nutritious edible bowls. Yes, bowls—any way you stuff them. But as a nod to St. Patrick—and because they're not on sale this week—I'm going green. Thank you, Judy Hand-Truitt from Birmingham, Alabama, for your Turkey-Stuffed Bell Peppers. Admittedly, I used reduced fat cheddar instead of soy cheese, but it's always nice to have options.
