I tend to think of February as Cabin Fever Month. I've had enough of winter, but spring still seems like a long way off. It's too cold to go out and exercise, so I do what a lot of folks do—stay in and eat.
When the winter doldrums set in, it's too easy to over-indulge in fatty comfort foods and couch-bound channel-surfing, so this year to break out of my rut, I'm planning to put down the remote and pick up a new healthy recipe or two. My daughter's at that age where she's just learning her way around the kitchen, so she's the perfect partner to help me shake off a winter slump. I get to teach her habits of healthy cooking that will stay with her for a lifetime, and she gets to teach me that breaking the spell of cabin fever isn't that hard, not if you have a warm kitchen, a full pantry, and a great selection of new dishes to try out.
