This month we’re looking for fun and fast! Think sloppy joe grilled cheese (yes! this is a thing); cheesy chicken and shells in a skillet; nacho bowls packed with beans & grains; butternut squash red curry or maybe an easy orange and maple sheet pan salmon dinner. Cool nights long for creamy tomato basil soup with speedy dumplings or a pasta fix with pumpkin (or butternut squash) fettuccine alfredo. Lentil bowls packed with sweet potato goodness; tacos filled with Sriracha chicken, mango and red cabbage. Honestly the possibilities are endless. Submit your favorites here.
Back-to-School Suppers Recipe Contest: Clarification
There was some confusion last month about this contest. There is NO ingredient limit for this. The mention of a five ingredient dish was purely for inspiration. If you had a great recipe with more than five ingredients you can still send it our way here! Always read through the contest rules any limits or restrictions would be listed as part of the rules. Recipes still need to be submitted by November 16th.
Make it Grain!
Based on submissions so far (only 11) this callout must be a stumper. I’m guessing that like me, some of you are new to the whole grain scene. Have no fear, I’m here to help. I found this great article on our site that lists several types and includes cooking instructions. Some of them are clearly more time consuming than others but none of them are difficult. They make quick cooking versions of bulgur and barley that’s a big with time. Bulgur and quinoa are very much like couscous. Browse through these recipes for inspiration. Barley is a great rice substitute. It takes a little longer to cook but in the end you have more nutrition and fiber. Give this callout a second chance for me. I’m sure you’ll come up with something fantastic.
